(Baking simple) Homemade Bread

I baked bread for the first time and it came out very well. You can also give a try. I used Indian atta , we use for making chapathi
Baking a bread

Ingredients
Atta…………..2 cups
Yeast………….1packet
Sugar………….4tsp
Salt…………….1tsp
Warm water…….¾ cup
Milk…………….½ cup
Oil………………1tsp

 Method
Mix warm water and yeast into a bowl stir until yeast is dissolved. Add  milk, sugar salt  atta and oil.  Mix well and make dough.. If needed add more flour. Knead the dough using floor  until the dough is soft and smooth. Cover the dough and keep in a warm place for 60 minutes to rise. Take it out after an hour punch it and  knead a little. Place the dough in a  greased baking pan and keep it for an hour more. Remove and cutting three slashes on the dough. Preheat the oven at 400 degree and bake the dough for 30 minutes. Take it out , let it cool.

We call jawarisi for sabudana, This dish is north Indian recipe. They prepare on fasting days(Vrutham like sankatahara Chaturthi), Very easy to prepare and very tasty too.


Ingredients


  • Sabudana....................1 cup
  • Roasted peanuts..........1/4 cup
  • Salt to taste
  • Lemon juice................1tsp
  • Cumin seeds................1 tsp
  • Curry leaves.............. few
  • Green Chili.................1
  • Coriander leaves.........1tsp
  • Cumin seeds.................1tsp
  • Boiled potato................1

Sabudana Kichadi

Method


  • Wash and soak the sabudana in water just up to the sabudana level. 
  • Remove the excess water. After one hour heat a pan with oil ,add cumin seeds, chopped chili and curry leaves. 
  • When cumin seeds turn into brown add the sabudana, salt, potato and saute it well.
  • Grind the peanuts into coarsely, add to the sabudana, 
  • When the sabudana is cooked sprinkle the lime juice and decorate with coriander leaves.

Black Eyed Pea Patties

Ingredients
Cooked black eyed peas....................1cup
Chopped onion.................................1/4 cup
Green chili(chopped)......................1.tsp
Scallion. (chopped).............................2tbsp.
Salt to taste
Red chili powder............................1/2tsp
Coriander powder..........................1/4 tsp
Maida...............................................4tbsp
Method
Mix above all ingredients and mash nicely with spoon or fork.Mix all together make patties. Add little water to the maida and make a batter.
Dip the patties on the batter and put them on the hot oiled pan and cook both sides till they become brown.(Use these as burgers for sandwich)

Ingredients


  • Oats………………………..1cup
  • Green chilli……………………..1
  • Mustard seeds………………1/2 tsp
  • Urad dhal…………………………1tsp
  • Ground nuts………………2tbsp
  • Curry leaves…………………….few
  • Salt to taste


Method


  • Heat a pan with oil add mustard seeds, dhal green chilli and curry leaves. 
  • When the mustard seeds splutter, add ground nuts,salt and oats .
  • Fry for 1 minute. Add ½ cup boiled water, salt. Mix it well. It is very healthy and tasty one.

Kara Boondhi

Ingredients
  • Besan (chickpeas flour.)...........2cups
  • Rice flour...................................2tbsp
  • Cashew nut...............................20
  • Curry leaves..............................few
  • Chili powder.........................1/2 tsp
  • Asafoetida powder..................a pinch
  • Salt to taste
Method
  • Mix besan , rice flour, salt, chilli powder, with water and make a bhajia like batter.
  • It should not thick or watery.Heat a pan with oil . 
  • When the oil is hot take boondhi thattu put a big spoon of batter. 
  • Boondhies fall , mix with a kannappai.
  • When they are crispy remove them.
  • Heat another tawa with little oil add cashew nuts, curry leaves,
  • When cashews turn red, add to the mixture. 
  • Add 1tsp chilli powder and asafoetida powder if needed add salt too.
  •  This is kara boondhi.

Batter
This dosa is very tasty and eat hot dosas. We use only rice and coconut for this dosa.
Ingredients
Boiled Rice                     1cup
Raw Rice                       I cup
Grated Coconut            1/2cup
Drumstick Leaves          1 cup
Salt to taste

Method

Soak both rice for 5 hours and grind with salt and coconut.
Take little batter and add half cup water and boil it.
When it becomes thick add to the batter and mix well. It should be like dosa batter. Heat a tawa add little oil and spread. 
Make dosa and put oil on its sides.
When it is cooked turn the other side..
Cook on medium heat. Cook both sides till it becomes crispy. 
Make dosas with out adding drumstick leaves. 
It is called thenga dosa (coconut dosa)

This medicinal plant is good for health. Add in dhal vada. salads and make bhajia.

Karpooravalli leaves..............6
Besan ....................................5tbsp
Rice flour...............................tsp
Chilli powder.........................a pinch
Salt to taste
Asafoetida.............................a pinch
oil to fry
Method
Make a batter with all the ingredients with little water except the oil. Dip each leave in the batter and deep fry in hot oil.Serve hot with chutney. Very tasty and easy to prepare.

Dahi Pakodi Chat (Yogurt pakoda chat)

Ingredients

Brown moong dhal.......1/2 cup
Dahi/yogurt................1cup
Ginger...........................1 small piece
Black salt......................1/2 tsp
Salt to Taste
Chili {owder...............1tsp
Chat Masala........................1tsp
Onion............................1
Coriander Leaves........few
Sev...............................1/2 cup
Jeera.............................1tsp
Sugar.............................1tsp

Method

Cut the onion and coriander leaves. Soak the dhal for 5 hours.
Then grind coarsely with ginger and add onion and coriander leaves. 
Make pakodis in hot oil. Mix curd/yogurt ,sugar and salt.
Keep the pakodi broken in a bowl add the curd on it. 
Sprinkle black salt, jeera chat masala chilli powder coriander chutney date chutney and on the top sev. coriander leaves/

Coriander Chutney

Wash the coriander leaves add jeera tamarind green chillies black salt, salt and grind these ingredients into fine paste.

Date chutney

Soak the date and grind with tamarind, jaggery jeera powder chilli powder and salt

Mor Appam

This recipe is not deep frying. Just like dosa making ,pour oil on the sides. Make this appam in non stick appakarai.
Mor appam is my favorite snack.Rainy days my mother prepared with left over dosa batter. Very easy to prepare. Mor appam and coffee is good combination. We never make fried items these days . Rarely I make this appams

Ingredients
  • Rice...................................3 cups
  • Urad dhal..........................1cup
  • Coconut flakes..................2 tbsp
  • Green chilies chopped.......2 tsp
  • Ginger chopped................2 tsp
  • Curry leaves ....................few
  • Asafoetida....................... 1/4 tsp
Method
  • Soak the rice and urad dhal together for 3 hours and grind , add salt and keep for overnight.
  • Next day add green chilli, ginger, asafoetida and curry leaves and coconut pieces. 
  • Heat oil in appakarai ( appam vessel) and pour the batter in each pit( kuzhi). 
  • When it becomes red turn the other side. Remove when they are fully fried.
  • Eat hot and drink hot tea or coffee.
  • You can make these appams in non stick vessel and with left over idly/dosa batter.

Puttu Kadala Curry (Kerala Dish)

ThisPuttu / Kadalaa curry is the popular breakfast of Kerala people


  • Prepare Time............10 min
  • Cook Time..................10
  • Serve............................3.



Ingredients

  • Rice Flour...............1cup
  • Grated Coconut.........1cup
  • Warm Water.............1/2 cup
  • Salt to Taste


Method

  • Roast the rice flour for 5 minutes.Mix rice flour and salt by sprinkling warm water.
  • Keep mixing with hands. The entire flour has to be wet.
  • ( you can get ready made puttu rice flour at Indian stores)
  • Keep water in the bottom of puttu vessel.
  • Take the puttu mould add 1 tsp of coconut first followed by4 tsp of rice flour ,then again 2 tsp of coconut. 
  • Keep layering to fill the mould. Close the lid
  • Steam the mould.. When the water boils the steam goes inside and cook the flour. 
  • Keep up to 4 minutes.Take the vessel in hand . 
  • Use a skewer(it comes with the vessel) and push the dish out of the mould.
  • Serve the puttu hot with kadala curry.


Kadala Curry

Prepare Time.............3 hours
Cook time....................20 min
Serve.............................5


  • Brown Chick Peas.......1 cup
  • Tamarind Paste............1tsp
  • Coconut......................   3tbsp
  • Red Chilli.......................3
  • Coriander Seeds...........2tsp
  • Chana Dhal....................1tsp
  • Turmeric Powder...........1/2 tsp
  • Salt to taste.....................
  • Curry Leaves...................few
  • Tomato ...........................1
  • Onion ..............................1


Method


  • Soak the chick peas over night. Chop the tomato and onion. 
  • Fry the chili, coriander seeds and chana dhal. 
  • Grind this with coconut and keep.
  • Cook the chick peas with salt .Add turmeric powder, tamarind paste,tomato and onion. 
  • Let it boil.
  • When everything is cooked add the ground paste and curry leaves,
  • Eat hot puttu with this kadala curry.
