Uppu Cheedai

Uppu cheedai  one of the snacks we make on Gokulashtami.
Uppu Cheedai is a snack with rice flour and salt
Uppu Cheedai

Ingredients

  • Rice Flour.........................2 cups
  • Urad Dhal Flour................3 tsp
  • Butter...............................3 bsp
  • Grated Coconut................3tbsp
  • Asafoetida.........................1/2 tsp
  • Sesame Seeds..................1tsp
  • Salt to Taste

Method

  • Mix all ingredients together. Add water and make a thick dough.
  • Do not add more water.Cover the dough with a clean damp cloth. 
  • Take a very little dough using your palm roll into a small marbles.
  • Heat oil and deep fry them. 
  • When the bubbles ease take them out. 
  • They should be crispy.
  • You have to be careful when you make cheedai. Roll the cheedai lightly. 
  • If you use frozen coconut see that it is in room temperature.
  • Roast the flour for 5 minutes.
  • Keep the flame on a low to medium while deep frying.

Dahi Vada (Thair Vadai)

Dahi Vada


Ingredients

For Vada
  • Urad Dhal.....................1cup
  • Pepper Corns ...............1/2 tsp
  • Dahi(Yogurt).................4cups
  • Green Chili.....................2
  • Ginger...........................1tsp
  • Coriander Leaves.............few
  • Chili powder.................1tsp
  • Cumin Seeds .................1/2tsp
  • Grated Coconut ............1/2 cup
  • Salt to taste
  • Oil to fry

Method

  • Soak the urad dhal for 3 hours.Drain all the water add pepper and salt. grind into smooth paste.
  • Do not add more water. The dough should be fluffy. Heat the oil in a medium flame.
  • With wet  hands  take a small ball sized dough  drop into oil and fry all vadas  till they become golden.
  • Remove the vadas in a paper towel.
  • Grind the coconut, ginger salt and green chili and add the paste to the yogurt and mix well
  • Heat a pan add 1tsp cumin seeds, and when it colour changes little add to the dahi.
  • Drop all the vadas into the yogurt ( add salt). 
  • Sprinkle chili powder. green chili and coriander leaves..

Vegetable Rava Upma


Rava  Upma is very s easy snack. This is usually  made for breakfast ,I always make upma with lots vegetables like carrot, onion, peas, capsicum, cauliflower,and  beans

Ingredients  





  • Frozen Vegetables.......... 1cup
  • Rava(Suji)...................... 1cup
  • (Carrot, Peas and Beans)
  • Green Chili.....................4
  • Ginger............................1 small piece
  • Curry Leaves...................few
  • Mustard Seeds...............1tsp
  • Urad Dhal......................1tsp
  • Chana Dhal..................1tsp
  • Salt to taste
Method
  • Fry the rava in a pan with out oil till it becomes red..
  • Remove and cool it.Heat a pan with oil add mustard seeds, all dhals, green chili, ginger and curry leaves. 
  • When the dhal becomes red add the vegetables and fry for 5 minutes. add 2 cups of water and salt.
  • When the water boils add the rava and mix well.
  • When the rava is cooked remove from the flame and cover it.
  • Serve with coconut chutney or pickle..

CabbageBhajjias

Trying out new vegetarian recipes has become my passion My son loves food. The good thing about  this recipe is that the dish always turns out tasty.
Cabbage Bhajjias

Ingredients
Cabbage Bhajjias
  • Chopped Cabbage………. 1cup
  • Besan……………………..1cup
  • Rice Flour………………...¼ cup
  • Ginger Finely Diced………...1tsp
  • Green Chili Chopped……  1tsp
  • Red Chili Powder…………1tsp
  • Asafoetida……………….½ tsp
  • Ajwain................................1 tsp
  • Coriander Leaves...............few
  • Salt to Taste
Method
  • Mix all ingredients. Add some water and make a dough.
  • Heat a pan with oil, take  the dough  little and deep them and fry them till they become crisp.
  • Serve hot with chutney.
  • You can also add diced carrots/green pepper/onions/ spinach/ cauliflower with the besan and make this vada.

Keerai Pakoda (Spinach Pakoda)

  • Besan.......................................1/2 cup
  • Rice Flour.................................2tbsp
  • Green chili................................3
  • Chili powder.............................1tsp
  • Onion......................................1
  • Hing........................................1pinch
  • Salt to Taste.

Method

Keerai Pakodas with spinach and spices

  • Mix besan, rice flour, chili powder, hing, salt chopped onion, chopped green chili into a paste adding water. 
  • Heat a a pan with oil.
  • Prepare small ball with the dough and deep fry them.
  • Serve hot with chutney.

  • Besan…….......... 2tsp
  • Rice Flour…....…2tsp
  • Onion……….......1
  • Chili Powder….....1tsp
  • Green Chili……....2
  • Ginger…………...1piece
  • Coriander leaves…few
  • Salt to taste

Method

  • Fry the semiya with 1tsp of oil till it becomes red .
  • When it cools down add besan, rice flour, chili powder, chopped ginger, green chili ,salt coriander leaves and chopped onion. 
  • Mix well. Heat a pan with oil.
  • Make balls with the dough and deep fry them. 
  • Serve with chutney.

  • Semiya……………............1cup
  • Frozen vegetable………......1cup
  • (Beans, carrot , Peas and Capsicum)
  • Chopped Green Chili………2tsp
  • Chopped Ginger…………….1tsp
  • Turmeric Powder……..........1/4 tsp
  • Curry Leaves………............few
  • Mustard seeds……..............1/2tsp
  • Urad dhal………….............1tsp
  • Chana Dhal………..........…1tsp
  • Salt To Taste

Method

  • Heat a pan with oil add mustard seeds, urad dhal, chana dhal.
  • When the mustard crackles add green chili ginger and curry leaves vegetables, turmeric powder and salt.
  • After 5 minute add 3 cups of water and let it boil.
  • Fry the semiya with little oil till it turns red . 
  • Add the semiya into the boiling water and mix well.
  • When it is cooked serve with chutney.

Taco Shell Recipe

Ingredients

  • Lentils (Beans)……................1/2 cup
  • Chopped Onion……..............1/4 cup
  • Taco Shells………..................6
  • Salsa.......……........................1cup
  • Shredded Lettuce…….............2cups
  • Guacamole…………...............1cup
  • Chopped Tomato…..................1/2cup
  • Cheddar Cheese……...............3tbsp
Method
Taco Bell with guacamole, cheese, bean paste
Taco bell, lettuce,Cheesebean paste and dip
  • Cook the lentils with water and little salt.
  • Remove the water and keep aside.(can use left over lentils) Prepare guacamole and keep . 
  • Put the taco shells in microwave for 35 seconds.
  • Fill the taco shells with lentils, guacamole, salsa, shredded lettuce, tomato and cheese.
  •  It is my favorite recipe and healthy dish..

Guacamole is a dip with avicado,onion and tomato

Guacamole
  • Cut 2 ripe avocados in half and remove the pulp with a spoon and mash them with a fork. 
  • Chop the onion, tomato,and jalapenos into small pieces and add to the guacamole. 
  • Add lime juice, salt and chopped cilantro.
  • This is very tasty dip.

Apple Pie

Apple pie

Ingredients
  • Ground Walnuts.................. 3cups
  • Pitted Dates........................1cup
To make filling
  • Sliced Apples(1/4 " pieces).2 cups
  • Lemon Juice......................2 tbsp
  • Raisins..............................2 tbsp
  • Cinnamon Powder............2 tsp
  • Mix all together and pour into the chilled crust.
Method
  • Make a powder of walnuts in a blender.
  • Chop the date and knead both together  make a dough
  • Pace this in a pie pan. Press it all the sides and keep it in the fridge.

Salsa and Hummus( Appetizer)


  • Bread Slices.................................12
  • Hummus......................................1cup
  • Salsa...........................................1cup
Method
  • Brush the bread slices with olive oil.Toast them in oven or in the gas.
  • Spread the hummus and then salsa. This is a healthy appetizer.
Hummus
  • Chickpeas.................................1 tin
  • Lemon Juice..............................2tbsp
  • Tahini.......................................1tbsp
  • Garlic.......................................2 pearls
  • Olive Oil..................................1tbsp 
  • Salt to taste
Method
Combine all together and bend into a fine paste. Add chopped parsley.
Salsa

  • Tomato.......................................2
  • Green Pepper..............................1
  • Onion........................................ 1
  • Jalapeno.....................................1
  • Lemon Juice................................1tbsp
  • Garlic..........................................1
  • Coriander Leaves..........................few
  • Salt to taste

Method
  •  Cut tomato pepper, Jalapeno, garlic and coriander into small pieces.
     Add salt and lemon juice and mix well.

  • Boil the tomatoes(use tinned tomatoes) remove the skin.
  • Mix tomato, green pepper, onion jalapeno, coriander , salt, pepper and blend them into coarsely.
