Chakli( Like Murukku)

This recipe is easy one to make.

Ingredients

  • Rice Flour...........................................2cups
  • Cooked Moong Dal............................1/4 cup
  • Ajwain..................................................1tsp
  • Sesame seeds........................................1tsp
  • Asafoetida..............................................1/2tsp
  • Oil..........................................................2tsp
  • Chili Powder...........................................1tsp
  • Salt to Taste

Method
  • Cook the moong dhal with little turmeric powder in pressure cooker
  • Mix rice flour, chili powder,oil, salt, sesame seeds,asafoetida, ajwain and  cooled moong dal  and make a  thick dough.
  • Take chakli press, make murukku like round shape in a plastic paper and stick the end.
  • So that while frying it  will not open . Heat oil and when the oil is hot, drop the chakli one by one. 
  • Turn them in between. When the bubbles stop, take them out in a paper towel. 
  • Eat with coffee or tea.
  • This chakli can be made with out cooked moong Dal. 
  • Use urad Dal powder instead of moong Dal. Add butter in place of oil.

Pasta

Pasta
I learn t to prepare pasta after coming here. Now my grand kids love pasta.First I didn't like pasta. After adding vegetables to it I started eating it.
Ingredient
  • Sliced Mushrooms..........................1/2 cup
  • Sliced Green Onion........................1/4 cup
  • Cherry Tomatoes.halves.................1/2cup
  • Vegetable oil..................................2tbsp
  • Salt and Pepper to taste
  • Chopped Basil................................2tbsp
  • Parmesan Cheese...........................!/2 cup
  • Cooked and drained Spaghetti........3cups
  • Mixed Vegetables..........................1/2 cup
  • Minced Garlic................................1 clove
  • Milk...............................................1/2cup..

Method
  • Heat oil in a pan and stir mushrooms, green onions and garlic for 2 minutes.
  • Add tomato halves .Cook mix vegetables basil and milk in a pan at medium heat.
  • Add  pasta, salt and pepper.,tomato mushrooms mix and stir well.
  • Serve hot. and pepper....

Aval Upma

( Poha Upma) is easy one to prepare.

Ingredients
  • Aval......................................1cup
  • Green Chilies.........................4
  • Turmeric Powder..................1/4 tsp
  • Chopped Ginger...................1tsp
  • Roasted peanuts...................1tbsp
  • Mustard Seeds......................1tsp
  • Urad Dhal.............................2tsp
  • Lemon Juice.........................1/2tsp
  • Curry leaves.........................few
  • Coconut..............................1/4 cup 
  • Salt to taste
 
Method

  • Soak the aval with little water for half an hour.
  • Heat a pan with oil add mustard seeds, urad dhal,curry leaves, green chili and ginger.
  • When the mustard crackles add the aval turmeric powder,lemon juice, coconut and salt.
  • Mix well.

Dhal Vadam(Kozhambu Vadam)

In our house we buy big mathan and elavan from chanthai(Market). After making kozhambu the skin and inside part(with seeds) of mathan,  we use for this vathal.Matyhan's kudal, skin and chana dhal, urad dhal, red chili ,salt and perungayam.soak them for 3 hours and grind coarsely.Make small  dough spread in a paper and dry in the sun.In our native place(Kerala) we keep this vadam for monsoon season. You can fry this and eat with thair sadam. Fry and add to the keerai masiyal. It is very tasty. Finally you can add in sambar (if you have no vegetables) and vathal kozhambu.

Urad Dhal, Turdhal,red chili asafoetida and mathan (Pumpkin) skin and seed part


Ingredients

  • Mathan's skin and inside parts...............2cups
  • Chana dhal............................................1/4 cup
  • Urad Dhal.............................................1/4 cup
  • Asafoetida(Perungayam).......................1tsp
  • Red Chilies............................................6
  • Salt to taste 
Method

Cu the skin and inside parts of mathan into small pieces. Add chana dhal and urad dhal mix well and sprinkle water and cover it for 4 hours.
Dhal vathal is with lentils and skin and pulp of pumpkin
Vathal
  • Grind them with salt. asafoetida and chili coarsely.
  • Keep small portions of the dough  in plastic sheet to dry in the sun. 
  • Dry it for at least two days to dry completely.
  • Whenever you need, fry them.
  • This is very tasty with thair sadam.
  • Fry and add in keera masiyal., and vathal kozhambu sambar.

Mysore Bonda

Mysore Bonda
  • Urad Dhal....................1cup
  • Raw Rice.....................1tsp
  • Black Pepper Corns......1tsp
  • Jeera(Cumin Seeds).......1tsp
  • Asafoetieda..................1/4 tsp
  • Curry Leaves .................few
  • Green Chili....................4
  • Ginger Minced..............2tsp
  • Salt to taste
Method

  • Wash and soak urad dhal and rice for 4hours.
  • Chop coconut pieces in to small pieces
  • Crush whole pepper corns and keep.
  • Grind the dhal with green chilies.It should be silky texture and fluffy.do not add more water
  • Remove the batter add salt,pepper corns, jeera asafoetida and curry leaves. 
  • Mix well. Heat a pan with oil.
  • Dip your hand in the water and make small ball with dough and drop them in the oil.
  • Fry them in a low flame so that it cooks inside too.
  • Take them out when they become golden brown.
  • You can try with maida instead of urad dhal .Same way prepare bondas.

Bread Bonda

Bread bonda
You can make this bonda with left over bread. Enjoy the very tasty and crispy bonda.

Ingredients
  • Rava..................... 3tbsp
  • Bread ....................4slices
  • Chopped Onion.......1/4 cup
  • Chopped green chili..1tbsp
  • Ginger.......................1tsp
  • Curry leaves,..............few
  • Salt to taste
Method
  • Remove the edges of the bread. 
  • Put in blender and make it powder..
  • Add rava, green chili,salt.onion, ginger curry leaves and make a thick dough adding water.
  • Heat oil to fry. Make a small ball with the dough drop them into the hot oil. 
  • When they become golden brown remove them in a paper towel. 
  • Serve with chutney/ sketch up.

Rava Dosa

Rava dosa is very easy to make . No need of soaking  rice or dhal.
You can make nice crispy rava dosa.

Ingredients

  • Bombay Rava.....................1/2 cup
  • Maida..................................1/2 cup
  • Rice flour..............................1/2 cup
  • Jeera....................................1tsp
  • Chopped Green Chili...........2tsp
  • Chopped Ginger...................1tsp
  • Cashew Nuts(optional)..........5
  • Curry Leaves.........................few
  • Asafoetida........................1/4 tsp
  • Salt to taste
Method
  • Mix maida, rava, salt chili, ginger,asafoetida,crushed cashews,curry leaves and jeera. 
  • Add water and make thin batter( add around 3 to 4 cups of water). 
  • Use a non stick dosa pan.Take a cup of batter , pour around the pan and make a very thin dosa..(You can sprinkle the batter with your hands) 
  • Pour little oil around the dosa.
  • Wait for some time and turn the dosa and cook the other.side. 
  • Serve hot with coconut chutney.You can add chopped onion too in the batter.

Neer Dosa

Neer dosa
I tasted this dosa from my friend Kotekar's house who is from Mangalore.I learn t from her and made it at home many times. It is very tasty and healthy with less oil.

Ingredients
Neer Dosa, With rice and coconut
Neer Dosas

  • Raw rice..................2cups
  • Grated coconut........1/2 cup
  • Water ...................... 3cups
  • Salt to taste.

Method
  • Wash and soak the raw rice for about 3 hours and grind with coconut into a nice paste. 
  • Add salt and make it watery. 
  • Heat anon stick griddle apply oil and pour the batter and spread around the griddle to make it thin.
  • Cook it in low flame. When it is cooked fold the dosa and serve hot with coconut chutney.

Special Bonda

I tried  this bonda and it is very good.

Ingredients

  • Raw rice.........................1cup
  • Urad dhal.........................1cup
  • Onion...............................1
  • Curry leaves.....................few
  • Grated coconut................1cup
  • Green Chili......................4
  • Mustard seeds................1tsp
  • Salt to taste
Method

  • Soak the rice and  dhal for about 4 hours and grind into fine paste with salt. 
  • Heat a pan with oil add  mustard,chopped onion,, green chilies, and curry leaves..
  • Fry for 5 minutes add the coconut and fry again. 
  • Then add to the ground mixture.
  • Heat oil in pan when it is hot make small balls and drop in the oil. 
  • Fry them till they become golden.

Sada Dosa

Ingredients
  • Rice........................2cups
  • Urad Dhal...............1/2 cup
  • Salt to taste
Method
  • Wash and soak the rice and  dhal for 5 hours separately. 
  • Mix both well and keep overnight  to ferment.
  • Next day take the bowl and mix the dough well. It should be thick and foamy.

  • Heat a dosa griddle, oil  the surface lightly and  take 1/2 cup of dough pour and spread beginning at the center in circular motion until the batter is spread out  thinly.
  • Put oil around the dosa .
  • Turn the other side to cook.
  • Remove and serve with mulakai podi with oil. and eat.
